Drawn from stocks of Very Old Sherries, dating back to the nineteenth century, assembled to an average minimum age of twenty five years. Fruit is sourced from the Oloroso designated, chalky soil vineyards of Pago Carrascal and treated to the ancient Solera system, elevated through tiers of maturing barrels and topped up with younger wines as they angels take their share. The resut is a concentration of opaque, nutty flavours, marmalade and vanilla, rich, elegant and beautifully balanced with barely a hint of sweetness.

Valdespino is one of the most treasured Sherries. El Candado is made from Pedro Ximenez grapes which are left out in the sunshine for at least a fortnight after harvest. The grapes slowly dehydrate, absorbing the unique and discernible characters of the Mediterranean as they turn into raisins. The sugar levels rise and the fruit is crafted into a wine showing an intense mahogany colour and alluring bouquet of aged rancio fruit. The palate is velvety rich, endowed with layers of complexity, remarkably smooth with a long and clean, exquisite aftertaste.

Crecchio is an ancient commune on the Abruzzo coast, dominated by the battlements of a medieval castle, its main activities are tourism and good wine. Trebbiano is the white grape of choice and there is no higher provenance, known throughout the world of wine as Trebbiano d'Abruzzo. Hand picked and briskly vinified, it makes a clean, structured style that's easy to appreciate. Fruity and pleasant, it finds itself very welcome around the luncheon table, its dry and food friendly palate is a bliss alongside shellfish, risottos and ripe, pungent cheese.

The Pecorino grape makes a lovely fruit and mineral style of wine that's just right for Mediterrannean fare, it unfortunately was the agent of its own demise as the low yielding vines were replaced over the years with varieties which could produce a more bountiful harvest. Pecorino was rediscovered in the 1980s and is now grown in many parts of Italy. Grapes are all hand picked and destemmed for a day or two of vinification. A delicious drink of tropicality, papaya and balsamic zip, serve lightly chilled alongside white flesh fishes or a tasty fry of fresh sardines.

Crafted from parcels of hand picked Pecorino grapes, grown to fully mature vines and treated to a highly traditional, wild indigenous, open vat ferments, to be bottled unfiltered and unfined. Pecorino was originally husbanded by the Benedictine monks to indulge during their sacraments, Tenuta Ulisse fashion this personable grape into a texturally creamy style, well proportioned, laden with apple spice acidity, crisp, juicy and dry.

Italy offers two entirely different wines under the moniker of Montepulciano, the other type comes from a town of the same name in Tuscany, this is the one that's actually made of Montepulciano grapes, picked off vineyards under the castle walls of Crecchio in Abruzzo. Respect for traditional winemaking practices is essential, Tenuta Ulisse ferment their grapes in open vats, through the action of wild yeasts, just as the wines of Crecchio have always been made. Beautifully perfumed of cherries and plum, seamless and stylish on a length of juicy, liquorice tannins.

The devout vignerons of Bodegas Tridente take a spiritual approach to viticulture, working closely with local growers to restore and preserve the health of precious, small yielding vineyards. Parcels of Tempranillo are sourced off unirrigated sites, much of it parched old bush vines, generally grown to frugal, gravelled sandy soils. Grapes are all hand picked and treated to a minimalist vinification, followed by a measure of age in barrels of French and American oak, softening the tannins while retaining the engaging eloquence and elemental charm of old world Tempranillo.

He chose Parellada, a grape with a history, it makes a wine with a distinctively dry fruit freshness.
